Was watching Al's pastrami so i decided to get mine from the soak water after 1 day.

Getting prepped for the rub down. I used a different rub than Al used.

Did a burn off and season of my smoker a couple weeks ago. Now time for it to work.

A friend of mine that does allot of pastrami said, I think i will hang one and see how it turns out.

Yeah not a bad idea.

My own personal opinion would be it will dry it out. I have found that putting the fat above it on another rack keeps it moist.

I will be very interested to see how it turns out.
 
Wow... A rare sight....... Rick has a smoker that you can see metal inside...... everyone get a look cause it wont be like that for long.........

3 Vac bags. I had to put paper towel in front of the pastrami because the vac was pulling the liquid up and not sealing good.
