My first attempt at using my new mes 30 couldn't have gone much worse but learned its best not to try and learn on 5 pounds of meat set the mes at 150 with some wood chips thought I would smoke for a hour then pull the chips. Second lesson I learned was that when people say 150 degrees they mean Celsius big oops after about 2hrs I had 5pounds of well not sure what u would call it looked like the leather on my work boots tasted about what I would think I boots would taste. Well lessons learned so will try again next weekend the wife brought home another round and a new meat slicer.

Mistakes are definitely a learning opportunity!  And, many times you benefit quite well from them too!  New Toys!
