Yes I ended up putting the ribs in foil for the full 2 hours. As I posted before I didnt want too much smoke, the wife doesnt care for it.

I used mainly lump charcoal with a chunk of apple wood every now and then.

I still have a great smoke ring, maybe hard to tell in the photos.

Progress Progress Progress.

Thanks for the comments and suggestions guys  I appreciate it.

Thanks

The ribs were good. I have been eating them the past three days. I would say they are better than what I could get at the BBQ spots here in Las Vegas.

Lucilles has good beef ribs but their st louis ribs are so-so.

i will be making these again soon.

Thanks

Great job! The ribs look awesome! I need to smoke some soon... it's been awhile.

Smoke ring is there but the issue maybe the flash of the camera. They look great ( send me some). We all like to help, but the bottom line is what you and your family likes, that is is your goal. Just strive for better or different taste profiles. Patients and finesse is the key.

Thanks guys.

I am really please with the ribs. I have only done spare ribs twice and made major progress from batch 1 to batch 2.

I think a lot of it was the 3-2-1 method and learning how to trim spare ribs.

Next try Jan 28th. Spare ribs and turkey breasts.

Thanks

Its kind of a real shame that you can share you methods of smoking/bbqing and show off the end product with photos but that it.

Only 1 third of the real story, missing the taste and smell factors.

Could be worse I guess, I just think it is a tease looking at some of these threads and seeing good looking meats.

just my two cents
