Water tray

What's the proper way to use it. Use water in it all the time? What is purpose of the water tray?

The water tray is a heat sink. It keeps the temps in the smoker more steady & some say it helps keep the meat moist with water in it.. Whether you use water or not is a personal preference. Some use water, some use sand or lava rocks, Some just run it dry.

1" thick steel plates worked wonders in my new braunfels offset regains temps right after "sneak peeks"
