Joe Pulling Pork Butt

 

Here is Joe pulling a Pork Butt.  We smoke them in Hickory wood chips for about 11 hours, then wrap them in plastic wrap and hold them under heat for another 10 hours.  Here we are pulling the butt!

Looks like he put the bone and fat in one pan and the meat in the other.

I know it's not good for you but I keep the fat in mine when I pull it unless it is grissle

He pulls out the bone, removes the top fat cap and begins to pull any large bits of fat and sinue off the meat...Most of the fat has been removed during the cooking process.  The meat is always REALLY tender and just falls apart when it has had enough time to sit and rest properly.

Yeah that is our thing, we keep them hot and pull them one at a time when needed.  This makes for really juicy barbecue, sometimes its still pink cause it hasn't had time to oxidate!

 

Hand Pulled Pork with sweet potato fries, mac and cheese and texas toast.
