New Traeger and Baby Back Ribs

its been a while, weve said our hail marys and are back!!! we are trying the 3-2-1 method in the new Traeger Texas and are almost done.... I have noticed the temps on the digital readout really vary.  Im in the Phoenix AZ area so its not freezing yet but at a 225* setting the readout rises up to 266... is that normal?

also the instructions said 5 lbs of baby back pork ribs for 3-2-1= 6 hrs... if I do 10 lbs will the time change?

we are trying the 3-2-1 method in the new Traeger Texas and are almost done.... For Baby Backs I use the 2-2-1 method with some adjustment for my personal taste.
