In Germany we get a good stuff from a special market. I like this one. It´s not easy to find the same cut like U.S because the local butcher doesn´t know the US cut.

Yeah, the different methods of breaking down the carcass in different countries can be confusing.  Even some regional variations in the US, but it looks like progress is being made there if the confusing terminology or marketing tags could ever be deciphered.  LOL

Now it's hard to get cuts in Germany that I could even recognize as beef cuts. Now you have a chunk of meat that does look half way normal. Might I also add that your doing a fine job with it too.
