First off welcome to SMF there Steve. You'll really like this place for there are a bunch of really good folks here that would just love to help you with just about anything to do with smoking meat. Then if you have any questions you just post them here or yu can try in chat for a faster answer. If you are really new to all of this I would recommend that you look up and take the e-course. It is free and it will also give you the basics on smoking. So with all that said now go and get something to smoke.

Welcome To Your New Addiction

Go Gators

Thanks for all the welcomes and advice guys!  I just whipped up a batch of the pork shots, and they are awesome!  As soon as I pulled them off, I slapped a big hunk of salmon on the smoker, we'll see how that works out!

Steve is right!  If you are a tinkerer, you can make your own smoker.  Lots on the market, but others on SMF have built their own with great results.

Another good investment is a good thermometer that can monitor both the smoker temp and the interior temp on the meat.  Make sure you calibrate the thermo to assure you are getting a correct temp reading.

A lot of the people here (myself included) have experienced the same problems and eaten their mistakes to get through it.  Practice, practice, practice, and don't get discouraged.

You are the one that decides what happens, and which recipes are right for you.  Keep it up, you will be great!
