Bow, evening.... Since you are new at this, curing is something that can be somewhat dangerous.. The person curing should study up on techniques and specific cures for the type of meat (ground meats or whole muscle) and type of curing (below 40 deg or in a curing chamber).

One of our "experts will be along to discuss what you are planning to do in all the above possibillities and help guide you to a safe conclusion..

Please be patient and maybe add some info here to help us out as to your plans....

Thanks guys for the help( I sure need it).. I was checking out some receipes on this site and found the "Unstuffed Smoked Beef Pepperoni Sticks" from Bear... Looks and sounds great and does not seem to be too complicated.. I will do some reading up before I try it..Any suggestions and or tips will be greatly appreciated. Thanks for your concern, because I am "new" to all this, and lovin it so far....

If you can't get it locally, you're better off looking into Cure #1 or #2 depending on what you're curing.

The price of TQ and the shipping are gonna kill ya!!

Don't bother with the bulk purchase from Amazon, I was wondering the same thing a few months ago, and once I found out where to look, I realized I could get it at the hardware/grocery store next door. Not every place has it, but if you have a few places that sell groceries around, chances are you'll find it sitting somewhere in the salt and seasonings area(typically on the bottom shelf I've noticed) for about $3 per bag. I use both, and they both have their place.  Some people only use one or the other.

Be sure not to do a straight substitution in a formulation as they are different compounds and must be used much differently.

The Mortons web site has a store locator and there may be one near you.  If not, there are many places on the net if you don't mind the shipping charges.

If you have a Bass Pro Shop close you can buy LEM Cure #1 there for like $3.99

If you cant find it lemme know , i have pounds of pink cure #1.....Oh yeah since your new to this, maybe think about just the cure 1 before you venture into the cure 2? Just saying
 
Bow, evening.... for smoking stuff, cure # 1 is all you will probably need... Cure #2 is generally used for long term curing of stuff like salami's at about 50 deg. F or so...   Dave
