Stuffing question

I know I am suppose to have a dedicated stuffer but just can't afford one right now but I do have a 3/4hr Cabels grinder with stuffing tubes, I know all parts of the grinder and meat should be as cold as possible, it has been getting around 20 her at night and was going to leave grinder outside tonight cover with a box question is

1. I was going to do 19mm collegen casings peperoni sticks, Am I going to have trouble suffing them with this unit I don't want to get the MUSHY stuff.  

2. I do not have a kidiney plate with this sfuffer I was going to use the largest hole grinder plate I have, would that work for 19mm and planing on doing some fibours casings for summer sausage later.

I was going to use one of Nepas (or I think the other guys recipe Kevin is his name) recipe,

I am not sure which recipe yet.

Use the plastic auger that was included and the small stuffing tube(see picture below. Its on the right) and you will be fine. You will not need to use the grinding plate if it is already ground.

 
Thanks bmudd, but I bought this grinder from a neighbor 10yrs ago and who knows how long he had it but back in the day it never came with it or it got lost, I tried weston because they make the cabelas grinders and stuffers but they said I could not get that "cyclone auger" alone, thanks.

Ive never used the grinder to stuff snacks without the auger so I am not sure how well it will work.

I started out using my grinder to stuff with a peanut shaped plate. Now I don't know if the regular grinding plate would wood. Now can you go to cabelas and find a replacement plate? If not I think that you will have to order one from carbelas. You might be able to grind the meat and stuff at the sametime thou. I just thought of that.

The kidney plate did not come with your grinder. This is how your stuffer should be set up with out the screw mechanism.... The tri star does not rotate. It just holds the feed screw in place while the feed screw turns only...

I wouldn't recommend stuffing through a plate especially in a 19 mm casing......

Joe's illustration is exactly how my grinder instructions indicate.  Except on mine, the tri star is actually the cutting blade and it does rotate.

I was able to stuff with it, but the dedicated stuffer is so much easier to use.

Driedstick,what I did was get a piece of steel flatstock about 1/4 inck thick by 1 inch wide,and cut it accureately to the width of the throat of the grinder. Drill a hole in the center the size of the auger tip.Can also drill the hole first.Curve the edges so it fits into the throat.Gind a little notch in the end of one end till it fits over that little tab on the grinder.Just assemble with the auger,the flatstock,and the screw down ring,without the cutting blade. Obviously this will not work for grinding and stuffing at the same time.Woks good for small batches
