I am from the upstate of South Carolina and have been using a gas grill with a smoke box and doing some electric stuff.  I want to do butts, ribs, etc.  thanks yall.

Welcome, Hamiltonbarnes!  Sounds like you're gonna be cooking for the lady. 

For ribs, use the search mechanism on  the 3-2-1 method.  For butts, search for pulled pork.

There might be some modifications available for the Brinkman, to make them even more efficient.  Some of the leak heat and smoke, but that can be improved upon.

Please let us look over your shoulder by sending photos.  We love the photos.  Enjoy, and take advantage of all the resources available.  GOOD LUCK!

First off welcome to SMF there Hamilton. Then if you have any questions you just post them here or yu can try in chat for a faster answer. If you are really new to all of this I would recommend that you look up and take the e-course. It is free and it will also give you the basics on smoking. So with all that said now go and get something to smoke.
