Friday I attempted spare ribs, 6 hours latter the dogs were very happy. I had my remote probes in there thinking i was doing the 3-2-1 at 225*. when I took them off i knew they wasn't right as the bones were not sticking out of the meat.

Today I said I am gonna do it again, I need practice. Same deal spare ribs 3-2-1 @ 225*. They turned out great! Only thing I  can think of why they sucked Friday is my remote temp probes were close to the edge of smoker and the heat was coming directly up instead of under the water pan and giving me a higher temp than directly over the water pan. I know the factory door therm is not 100% according to my dig probe,  but friday it was reading way below 225. Tonight after the first hour it was reading real close, about 10* off,,,,,,,anyway good ribs, wife thinks I'm superman again so all is well, but the dogs are mad!

 You feed spares to the dogs. At the cost of spares here that was some mighty expensive dog food. But ill also admit when I started smoking, the dog got some Q as well. I also ate some Q that was not so good . lol So you are not alone by any means. Glade your second run came out good. keep the TBS rolling.

 Thanks all. They was pretty good.  I'm new to smoking so i need practice. It hurts after you spend several hours smoking and the meat doesn't come out so well.  I have a  brisket and a butt in the fridge for this week. Yea my dogs are really spoiled they always get something mixed in with their dog food.
 
I just dumped my two racks of ribs. My mistake was using a lot of mesquite. I just couldn't get past the taste. Yuck!

But your ribs looks great.
