Nothin really new or exciting but made up about 6 pounds of slicing boloney today along with 5 pounds of boloney dogs. I also had some Cumberland mix that was in the freezer from a couple weeks ago when I ran out of casings....made some chipolatas (little sausages) out of them...
The big boloney was poached on the stove and will be slice thin for sammies and thick for breakfast and dinner steaks
I cold smoked the hotdogs for a few hours then poached them on the stove to 150°.
The chipolatas I'm thinking will be nice wrapped in bacon and tossed on the smoker then some sort of hot/sweet sauce for dipping. Still thinking about that one.
Oh and that big 38mm stick, I ran out of hotdog casings again so I finished the batch off with some collagen that I had handy.
