Just trying to follow protocol.  I am from the St. Louis, MO area and am a newbie to smoking.  I got a Masterbuilt Electric Smoker last christmas, as I have been wanting to try my hand at smoking trout and cheeses.  I have smoked a handful of different meats (pork butt, whole chickens, beef brisket, and hams), but today was my first attempt at cheeses and I went all in with 6lbs of it.  We will see.......

I look forward to learning more and sharing my experiences as I learn to use my smoker.

I also have an Master-built electric smoker, just last year I got one of those

Amaze-n-smokers. Its the best, you can smoke for 12+ hrs.

First off welcome to SMF there Matt. You'll really like this place for there are a bunch of really good folks here that would just love to help you with just about anything to do with smoking meat. Then if you have any questions you just post them here or yu can try in chat for a faster answer. If you are really new to all of this I would recommend that you look up and take the e-course. It is free and it will also give you the basics on smoking. So with all that said now go and get something to smoke.
