Tried out my new Master Forge today.  Son picked up some spare ribs for the test.  I only smoked one slab of them today for a trial.  About 6.5 hours.  No 3-2-1 method, just smoke.  Encountered a few issues like I have seen others here talk about.  Heat fluxuations and smoke escaping from the doors.  So I know I have a few mods to make this week.

As for the rib rub, a mixture of Tony Chachere's seasoning, raw sugar, and a small amount of paprika.  Well it was SPICY!  I certainly need to change it up a lot if I use that again.  Will definately search here for a decent rub mix.  I did cut the rack in half and just rub on one and the other was a mustard slather and then the rub.  I spritzed the ribs about every hour with apple juice/H2O mix.  Smoked with hickory chunks which caught fire numerous times.  Soaked a few which seemed better.  Need a better smoke box.

As for the ribs, well here is how they looked.

Pretty tasty all in all.  Just need to work on the rub. Just something simple.
 
I see no probs with those ribs!

As to rubs, I find myself using them more sparingly on ribs.  (no pun intended)

You are on your way.  Learning is half if not more of the fun!
