What to do with 3lbs of ground beef?

Picked up all my meat today and for some reason I grabbed a bunch of ground beef for some meatballs for dinner tonight. But instead of doing hamburgers what else can you do with 3lbs of ground beef and a smoker?

I thought that was a given.That's the only way i do meatloaf any more is to smoke it.

Scottish eggs (smoked first), then dipped in egg, rolled in panko and then fried..

Beef Summer Sausage!   You can stuff it in casings or just make it into "mini-footballs":

These I added hi-temp cheese to also - perfect for football game snacks!
