First try at King Salmon

Earlier this fall, my nephew gave us a a freezer bag of King Salmon to try smoking. There is probably 3.5 or 4 pounds in the bag. This morning my wife said that she would like fish for supper tonight. Instant Aha moment. Lets thaw out the salmon and smoke that!  The Salmon was finally thawed around 5:00 but I wasn't sure just how to smoke it. Hello SmokingMeatForums... Browsed through a few postings and finally decided on the simple approach. some bread crumbs, lemon pepper, and a little salt. It's been in the smoker now for about 45 minutes. sure smells good. The Masterbuilt gas smoker is holding temp excellent even at 24 degrees outside. good thing the wind isn't blowing.  Now for the bad part of the post. My battery is shot on the digital camera - no pics!  I will let everyone know how it turned out soon.
 
OK - All done smoking. fantastic flavor after about 2hrs of smoke. I think I had a little too much salt in the coating. But still very good. The wife didn't care for it to much because of it being a stronger fish taste. The boy says "it's OK". Some people just have not taste!  The Tilapia that I put on went over much better. Much milder flavor that appeals to the wife. The boy... "it's OK". Like I said, Some people just have no taste.

As far as I am concerned it is a winner! Guess the next time it will be for just me, myself, and I. I can live with that.

The best thing about being the only one that really liked the salmon is the leftovers. Lots of leftover fot snacks today. Yum!  Think I am getting salmoned out now though. It was great while it lasted, but as they say, All good things must come to and end. And so has the salmon.
