My first pickling

i've been wanting to make pickles for awhile so i finally got 'round to it.  i had bought some mini cucs a few weeks back at the store but unfortunately i let there them to long and they rotted...so i went to publix and bought some regular cucs.

sliced them up and boiled the jars to sanitize. 

i made 2 flavors (wanted to keep it basic for my first time)

Jar #1

- 1TBS Dill weed

- 1tsp white pepper (didnt have pepper corns)

Jar #1

- 1tsp Chipotle powder

brought 3 cups water and 2 3/4 cups white vinegar to a boil and reduced heat.  then stirred in 1/4cup kosher salt.

i got a little nervous because i didnt hear the POP till about 30 mins..then the 2nd one popped probably 20 mins after that.  now ive got them stored in a dark place in my closet.

Going to wait 3 weeks and them give them a try

Question...the seasonings keep accumluating at the bottom..should i shake the jars ever few days or so? or does this not matter?
 
I don't think it matters Doug.

Once it's been brought to a boil the flavors are released into the liquid.

Interested to see how they come out

Now your pickles look good so far. I have started making some myself and they have came out pretty good. I didn't boil the pickle water I just poured it into the jar. I used a little cydar vinegar and some pickling spices and added some dill weed and let them sit in the frig for a couple of weeks and they came out prett darn good. So I'm gonna have to check back on this one for sure. 
 
Looks good...I do not know if it makes any difference or not but when I pickle something I usually shake them up every few days. BTJM...
 
I love to make Kosher Dill Pickles...I usually use Kirby Cuc's, I'm interested to see how these come out...JJ
 
yea i've been shaking every few days or so but the spices seem to be mixing around the jar now and not settling as much.

i dont need to refrigerate this do i?
 
**Update**

hey guys...so i have a question...i've had these buggers pickling since Dec. 4th and they still dont look transparent enough to me..but then again i've never done this before so i could be wrong.

i even went to publix and compared to a jar that had similar thickness cuts as mine but i would say they weren't far off, looks-wise.

do you think these are "done" or should i let them sit longer...here is a pic i took last week

I asked my mom what she thought since she's the pickle maker. She said pickles are ready in 3 to 4 weeks. However the longer they sit the better they are, she recommends at least 8 weeks. She also stated there was no need to shake the jars. She also had a tip for you, Use fresh dill, and if you can find it with dill heads.

thanks for the info guys!

i'll open these up this weekend and give them a taste!   Good call on the fresh dill, i was wondering how much of a difference it would be between dried dill
 
Hey D. The pickles look great! When I can "Stuff" I always leave the rings off until I start eating whatever I pickled. If you have any kind of problems the lids will come off from the pressure and you know not to eat the "stuff".
