After seeing Tom C's Tri-Tip and Otter's PR i had to run out last night and see what I could find.
I found a boneless 5lb Rib Roast for $5.22 lb
Rushed back home and fired up the Char-Broil offset with RO lump and pecan.
Rubbed with this while the cooker was coming up to temp.
Rubbed and ready
Smoked at 275º for 3 hrs till an IT of 137º
I usually wouldn't smoke at this high a temp but I didn't get it on till 8:10 PM
so I was in a rush to get it done.
I placed in a pan with Au-Jus the last hour of the cook.
Sliced after an hours rest.
Finally my midnight dinner
