First Try at a Fattie Questions

I know this is going to be abitious, but one of my friends just gave me a couple pounds of alligator sausage with a dare to make a fattie out of it......I need ideas for what to stuff it with, and whether there is anything special I would need to do with it.  It IS mixed with some pork fat since alligator has 0 fat.
 
Blackened Shrimp w Sauteed Peppers,Garlic, Onions and Celery. Maybe some Thick, Seasoned Grits or Rice would be Nice!

Ewe...I don't think I'd ruin it with grits...but I'd do something totally cajun, like a gumbo mix inside the gator.

Maybe make a roux, and Cook garlic, onions, celery and okra, stirring constantly until golden brown in melted butter...then Season with parsley, thyme, bay leaves, salt, cayenne pepper and black pepper. Bring to a boil, reduce heat, and simmer.Add shrimp, crabmeat and andouille to pot. Stir in hot pepper sauce and Worcestershire sauce.

Put that into your gator fatty, wrap it up and smoke it...That sounds really good to me.

I like all the ideas so far....except the giving away my meat one ;)    Once I get it done I'll post some comments and possibly some pics.
 
I'm with Chef on the grits. I'd make a really thick batch of cheese grits and make a log maybe 1.5" thick and as wide as the sausage slab out of them by rolling in cling wrap then refrigerating for a couple hours. Then I'd make a mushroom ragout with red wine and Cajun spices and spread that on the sausage slab. Roll the whole thing around the log of grits, wrap in thin strips of tasso ham and smoke for a couple hours. Then serve slices topped with blackened shrimp. Just for fun I'd probably serve it topped with a tomato cream sauce made with reduced shrimp stock, tomato paste, cream, butter, cayenne and a splash of some good smokey tequila. Good luck and don't forget to post pics of whatever you decide to do.

Grits in a fatty?  That's a new one.  Has anybody ever tried this before.....

Sounds interesting for sure.  I would be concerned about the grits soaking up too much grease from a regular pork based fattie, but like you said Alligator has 0% fat.

I like the shrimp an grits idea but using alligator for a fattie now thats a different subject. I think that it's gonna be too lean for a fattie and personally I would use that meat in a recipe that would highlight it instead of cover the great flavor that alligator has. I would recommend that you do a fattie with hambuger an sausage and do the gator later. Thats just my pennies.
