I'm in the middle of smoking a butt today. Went to Costco the other day and bought their two pack boneless butt. The package is a little over 15 pounds.
Here's the package before I opens it last night. One butt is almost 8 pounds, the other a little over 7. I decided to smoke the larger one first, here's a photo.
8 gleaming pounds of Porkaliciousness! Not a real word but it should be.
All rubbed up and ready for a plastic wrapped nap. This was about 8:00pm last night.
This was at 5:45 this morning, ready to go into the smoker.
Just getting the butt into the GOSM. The wood box isn't in but it had hickory and apple wood inside. Today the weather here in California wasn't the best for smoking - still strong winds around the area. Got the GOSM up to 240 and it stayed there all morning, it's a rock star in my book.
Here's the butt after 7 hours sitting right at 165 degress. I sprayed with apple juice and Captain Morgan for the last 4 hours.
The smell is fantastic. This forum NEEDS Smell-O-Vision!
Getting ready for an aluminum wrap.
As of this writing the butt has hit 205 and just got wrapped in towels. I'll post more in a few hours.
