Those #'s are good. Average 8oz per person finished product.  I have not done a brisket in a while but the last one I did there was about 30% loss after trimming and smoking

A lot of numbers get thrown out there and most are based on raw meat weight.  As you have seen, with brisket, you have a large amount of trim to deal with.  Also, the makeup of the crowd.  Men, women, children.

Then again, who minds a little leftover brisket?

Good luck and good smoking.

When I cook for a group I figure 1/3 lbs for plates with sides.  If sammies are the order 1/4 lbs will do.  A 10 lbs brisket will yeild about 6-6.5 lbs cooked.  These weights are cooked weight and assume reasonable side dishes.

well ive gotten a good collection going and i think imma try to smoke around 6 briskets, only gonna be around 14 people at the max. should i do more than 6?

How big are the briskets that you think you need to do 6 for 14 people? I bet one 7 or 8 pounder will feed everyone. 6 briskets will leave you with about 5 extra......lol

Are you smoking whole packers?

Sounds like fun!!

lol well ive got a buddy that owns a butcher shop, and since this is my first time home for any real amount of time since afghanistan (i've been stuck in new york where im stationed) he has donated 6 to this bonfire and said to sell any after that for 1/2 off. but they are the whole thing and are good cuts.

Thank you for your service!!  I appreciate what you are doing for us.

If the briskets are whole packers 2 would  feed my friends....I"m talking big packers.  BTW, great friend you have!

how are you serving the brisket?

sliced with sides at a sit down dinner?

chopped or shredded as sandwiches?

if you are going to do sandwiches and just put a tray out for people  to eat as they want then i always figure a pound a person cause some will want a couple throughout the evening

two twelve pound briskets will easily work for 14 people dont forget weight loss as you cook them,  but 6 or 7 is way to much

welcome home  i'm sure your happy to be out of afghanistan!

thanks for the service!

oh your more than welcome i was happy to serve, and i planned on serving it up as sandwiches and serving a side of smoked ranch style beans with it. also there will be a keg at the bonfire so beer will be a filler too. i plan on smoking it with my families signature rib rub and was thinkin about smoking the buns for added flavor. this possible?

ive never smoked the buns so i dont know how they will turn out   you might be better off doing them on the grill so they toast

by the way can you guys release BOB so he can come back home to FLA,  we need some serious help
