So are any of you planning on making smoked sausage for gifts?

I have done this the past 4 years with smoked cheese and its a big hit.

So if your going to do this post some pics and lets see. We are having a Christmas drop in at our home for the new neighbors to come over. I will take some pics of what i made for the meat-n-cheese trays.

And

Do you have any Christmas sausage equipment on your want list?

I think my wife got me a Cabelas 11lb with the motor, or a glass door merchandiser (cooler like they have sodas in at wally) for my dry cure, i also seen where she had my LEM & Sausage Maker book out?
 
Just finished up our Christmas summer sausages. I have cheese to do this weekend. We send it out every year to our family and friends as presents. My apologies for once again posting crappy cell phone pics. The jalapeno are always the biggest hit so this year I decided to also do a limited batch of chile de arbol as well and those came out incredibly good. It definitely is a little more spicy than the jalapeno.

For Christmas I am hoping the wifey will let me buy the parts to build a 70 - 100lbs water powered stuffer. I got my shopping list at McMaster-Carr all put together last weekend.

I might try to pump out some summer sausage before the holiday season, but it not far off and I don't see finding the time anytime soon. Looking forward to the party pic's Nepas.

Hey Joel you need less sausage or stronger shelves! I'll take the one third row down and second from the right
 
Were going to give out pepperoni & smoked cheese to friends & family.

I pretty much have all my toys, another freezer would help though.

The shelves got messed up brining the turkeys a few days before Dan. I need to fix them.

This is what I am basing my plans off of. I am still trying to figure out a collar so I can use the stuffing tubes I already have.

No sausage toys for me....... I pretty much have all I need..... Shooterick had a injecting gun at the SELA I would like to have. My spouse said she wanted the Ipad2 so she is going to get that... I want this for christmas......

The only problem i see with that stuffer is the top valve. Why would you want the mix going through the valve and getting all clogged. IMHO

I have some reservations about that as well based on the three piece valves I have been seeing but I am willing to give it a try. I have seen a couple of these in action on Youtube and another forum and they seem to work fine.



 
Can you leave out that valve and put a inline foot valve for the water inlet? That should do the same thing as the top valve.
 
Is there some kindve bypass valve u could install?

My Dad had a mobil on at the locker that was water powered with its on pump and it had a valve and a bypass!

One of the things I was thinking about is just relocating the water inlet and outlet valves closer to the top of the stuffer. There is no reason why they have to be at the base.
 
We have traditionally done sweets for neighbors at Christmas.

Now, I have them more toward other things.  Lots of sweets in most peoples' houses this time of year.

Great time of year to cold smoke.  I am thinking more toward cold smoked cheese and Canadian bacon for their appetizer needs?

Some want sausage, and that can be handled.

For myself, I am so blessed that I ask for nothing.  Any toys I want, I will choose and purchase for myself.
