Here are some wings that I did awhile ago just finally gettin them posted.

Enjoy the view!

 All the wings were soaked in Pops Lowsalt brine for 3 days.  I threw some in a bag and coated with some BBQ rub.

These wings for me I tossed in some buffalo wing sauce...Oh my these were soooo Gooood!

Wow, great job on them!  Making my mouth water!  Did the cure profile come out in the flavor?  And was the balance between salt and sugar seem right?  Just seeing if any more adjustments need to be made!
 
SOB, ain't nothin wrong with ANY of that!  I like the low salt brine idea.  Outstanding job!

 Thanks Pops!  The wings that I left plain....no other seasoning except for the brine... had a slight sweetness to them. But it was not too much at all! These were also the wings I coated with some buffalo wing sauce and the sweetness was barely noticeable. The wings that i coated with the rub were also very good and I could not notice any flavor difference from the sugar. I think the lowsalt brine is a must when doing wings to keep them plump and juicy. If the sweetness was to prove to be too much for some could it be lowered without messing up the brine???maybe add some hot sauce or ground chilis  to it for some heat to the soak? Just a thought?

Great looking plate!!

 Guess I will be using the Pops brine on the wings that come out of the freezer tomorrow..

Gonna fry em and toss em in my rocking habenero sauce.

PING I can't see the wings (am I going blind) oh no what's happening to me. Oh poop I'm on my phone and it wouldn't let me see some great wings. I just happened to eat some pretty bad wings tonight too.
