Good Afternoon, and Happy Thanksgiving!

My name is Amy and I live in Virginia (I own a Catering business..so, maybe if I get good at this smokin' thing...it might become part of our regular offerings)...I am a "virgin" when it comes to smoking anything.  I have never used any type of smoker. Saw the masterbuilt electric smoker w/ digital read-out and thought - wow - that seems pretty easy.  However, I was very disappointed when it arrived only to find 4 recipes (none of which were for a turkey) and really no instructions on how long to cook (smoke) or at what temp...I think you get the idea.  I was finally able to get in touch w/ someone @ masterbuilt yesterday ...she kindly listed this web-site for additional information and sent me a temperature chart + recipe for the turkey.  As I mentioned in my previous entry - I purchased a 23 LB turkey breast and am going to attempt to smoke that bad boy!

I will look forward to any help and assistance that Smokin' Al or any other smokin' buddies can offer!

Welcome to SMF.

 The most important thing to remember is the 40 - 140 rule.

 Bird must go from 40 to 140 degrees in 4 hrs or less.

 A 23 lb breast or bird may make this difficult.
