This year I picked up 2 turkeys, a 23lb and 20lb. My wife thinks I'm nuts because for the first time it is going to be only her and myself and our daughter and her family of hubby and 2 children. I really didn't think they turkeys would fit in the Brinkman so I decided to fire up the monster.

The turkeys were both brined for 24hrs and rubbed down with EVO and seasoned with Lawreys, garlic powder and onion powder. I figured there was enough salt in the brine that I didn't need to add more.

Here's the twins all dressed and ready to go.

On the smoker for 5.5hrs using maple and apple.

I have some air leak issues that need tweaked but I could not seem to maintain steady temps. 200 one minute 170 the next,

I added more wood then it went from 180 to 300.

I tried this once before and the results were pretty good so I did it again.

Smoked brussel sprouts.

To make matters worse, I smoked the stuffing as well.

Ill add more pictures when everyone gets here and the results are in.

 After a co-worker told me that he and his wife were dealing with her health issues and surgery last week, there will be only 1 turkey served this year.

I am definitely not a master at this and never will be, but suddenly my turkey just got alot better.

Update:

Didn't get all teh pictures loaded like I wanted but this was the first helping.

Mashed taters and gravy, green bean casserole, strawberry salad, veggies and spinach dip, apple onion salad and of course turkey.

I forgot the smoked brussel sprouts in the freezer.

The dressing was a MAJOR fail! (wouldn't let the neighbors dog eat it)
