How much smoke for a turkey?

I'm smoking a turkey for Tgiving tomorrow. I have a huge problem of way over-smoking things to the point of bitterness. I'll be doing a 14 lb turkey at probably 250*. How many of those ~6-7 hours should I be smoking, and how much of it should just be heat?

I looked at your profile pic and I assume you are using a MES.......I would go higher on the temp around 300 and try to get the bird done in about 4 hrs with some TBS (thin blue smoke).........

Alrighty, smoke the whole time it is then! Thanks fellas.

And yes, this is on a MES 40". I brined it, and then gave it a small injection of Tony Cachere's cajun butter, some butter under the skin with a small dash of Tony's, and then a sprinkling of Tony's on top. In hindsight, this is a lot of salt, so I'm hoping it doesn't turn out too salty. Guess we'll find out!
