I agree with Scooper, the majority of people like fall off the bone with a lot of sauce.

I'll go ahead and foil them but Im leaving the sauce on the side. I can eat them with or without sauce. I did make some of Soflaquer's Carolina mustard sauce last night to go with them though, as well I have some Sweet Baby Rays for everyone who doesnt like mustard sauce.

I have done t;at many times. Works fine. I let them come to room temp while re-firing the smoker.
