Hello Im Bill, Been lurking around the fourm for the last couple weeks reading all I can. I will be smoking my first turkey on Thanksgiving its already submerged in the brine waiting on the next step the rub before she smokes. I have got a 38" Smoke Hollow Smoker already seasoned and smoked a injected chicken last week it was delicous took longer than it should have the door thermo off by atleast 30+ degrees. So I just got my digital termos in the mail today got 4 digital Taylors 1 for every product cooking on the shelves and a remote 2 probe thermo from Maverick checked all termos for right temp so good to go.

plan is to smoke between 260 and 275 for 25 min a pound till it hits 165
