i want to stuff some sausage to smoke, but i have to work for 24 hours and won't have time to smoke it. I want to stuff it tuesday, put it in the fridge, and smoke it thursday. Is this ok? it will be my first attempt at smoked sausage. . I'm trying to work out the aging process, processing and smoking of my venison with my schedule and it's not working too well.
any advice is very much appreciated
