Sunday Brisket (Qview)

I find that beef brisket tends to dry out and cooking it in the pan helps keep it moist.  Plus you have all the wonderful dripping for gravy.  I started smoking just tri tip because it has the layer of fat around it and is moister.  Smokin' Vegas
 
I notice a lot of people smoke things in pans, is this method better than just putting on the racks and cooking?

Your brisket looks great, but what about all that Bark people look for?

I have not done brisket for a long time and am curious about this.

   Thanks Dave, I've never smoked in the pan before. This is new to me.

I'm trying to get the most tender juicy brisket possible.

I'm willing to sacrifice the bark for the tenderness and flavor.

The crispy bark would be great, just not sure how to get it and juicy brisket at the same time, but I'm working on it!

No bark but very juicy, the Beef Stew seasoning worked out great.

I found I can get a smoke ring, smoke flavor and still be moist by cooking in a pan.

Even the wife said it's the best brisky yet! And you know what that means

I have never seen a better looking Brisket !

The burnt ends look perfect, and the plate is over the top!!! (perfect plate for a growing Bear)

And the BearView is Beautiful !!!
