Greetings everybody. I am a new guy from Montana. Not much experience but I am hoping to change that! I am a garage butcher that is hoping to expand my wild game business a bit and start doing some smoked sausages and jerky. Looking forward to learning more on here. Is there anybody on here using large commercial ovens like the enviro-pack and koch smokers?

The temp (here in Rockport) dropped down into the low 60's last night, it's starting to get cold here!!!!

Wingnut, I am in the Great Falls area. Actually looking at a smoker down in the Butte area. Your weather forecast makes me a bit jealous :) We were below zero this past weekend but should get to the 50's by mid-week.
