First smoke & starting with Whole chicken w/pics

Ok so got everything set up ready to go. Just need to light the smoker get it to temp. Going to season the birds in a few.

Im taking pics so you will get to see. I know you want to :)

Wish me luck. Little nervous but excited all the same.

Everything is fired up, birds on @ 12pm EST. Temp is sitting at 250f right now. Adjusting everything till I get the feel and get the temp up a bit more.

They look good...BUT...I need to caution you on all that Apples and Onions....They can keep the cavity at a much lower temp than the outside of the bird leading to Bacterial growth!....One Quartered Apple and One Quartered Onion is Plenty...More is definately not Better when it comes to stuffing Poultry...Be Safe...JJ

Looks like more than it is, each had 1 quarter of onion and 2 quarters apple. The rest in that bowl went into the water bowl :)

Thanks and you have no idea man. I think they turned out pretty good for my very first smoke ever.

As soon as the wife gets home it's all she wrote for 1 of those birds.

Some of the chix we buy in my area are just called "young chix".  Or "whole chix" even though the giblets might be missing or incomplete?  Even with the giblets, I wonder what the chances are the giblets matched the chix?  Or if the matching part matters that much?  LOL  It is all done on such a large scale these days.  If it wasn't, our costs would be much higher.
