ok. i can't resist tinkering as i don't think this flavor profile worked out as well with heavy apple. back to equal parts hickory,cherry,apple.

going to revert mop to a past version.

a new step is to put the rub on san sugar. let sit an hour then coat with sugar. this trial run will be light brown sugar.

some good and some bad this time around. 

bark has been off point the last few smokes. the ribs have been tender juicy but the bark and rub flavor have been off. i think the olive oil help keep them tender but must be effecting the rub penetration. i say a youtube vid where a guy uses vinegar as a base. says it help the rub penetrate the meat by opening the pores. going to try that, then rub, then dark brown sugar.

the good is my sauce came out better. after reducing i blended it. it was more uniform and tasted batter.

one more smoke trial!
