well after reading some posts today, i got mighty hungry and stuffed some beef stixx..Letting them rest tonight and will apply some sweet hickory to them in the morning.. I can't wait till they are ready..

Small 19mm collagen casings...first time I have ever used collagen. I have always used natural sheep or hog casings. These sure are a lot less work. Got 'em smokin now. About 2 more hours until the ice bath. ! Ill post a finished product pic later today. Thanks.

Those look great, was wondering do you have to water bath 19mm down or can you just cool them down

outside or in fridge?? right now here it is 34degrees, just wondering, I am going to have to do some of them

I used the LEM seasoning.   I have some Polish Wedding sausage in the smoker right now though. Used Rytek Kutas recipe on these,,, will post some pictures tomorrow. We have been in "smoker" mode for a couple of days now leading into the Holidays!!!..
