This was my first attempt at smoking a butt much less three at one time. 2 - 10+ and 1 - 7+. Over 28 lbs of Butt. I started with the King Sooper moist and tender. I used the EZ Rub from the sticky for two of them and Famous Daves for the other one. I let them sit over night and started them this morning about 0815. I used half Hickory and half Apple wood chunks. I used a Apple Peach passion fruit to mist them with. I kept the temperature between 225 and 250 depending on the wind and my finiky Camp Chef Smoke Vault. I didn't open the smoker for the first 4 hours. I ran the temp up to around 165 and then foiled them poured more juice in the bottom and then put them in the oven to finish them off. Each butt was between 195 and 198 when I decided to pull them and place them in a cooler to set for an hour. Then I unwrapped and pulled them. They just fell off the bone and pulled nicely.
