So, the whole reason I wanted a smoker in the first place was to make mass quantities of lucious pulled pork all for me. My wife and I love pulled pork and had some really well done PP at a party my band played earlier this year and we've had the itch to make it at home ever since. As you can see, I've practiced the past few weekends to get to know my MES with some poultry, chops, and CSR's. I've finally got some time to invest in boston butts so I stopped at my local Fareway to pick up a butt Monday after work. Much to my dismay, there were no boston butts in the meat case when I arrived.

 They had them the last time I was there so I asked the young man at the counter and he said "Yeah, I've got some in the cooler." He brings out this enormous cryovac packaged pair of Chairman's Reserve Select pork goodness and sets in on the scale. Yes, I could have bought just one, but I figure, might as well go big or go home, right?

So, as you can see, I used two different commercial rubs....haven't quite got to the making my own stage yet...baby steps.

I have Friday off and was planning to get up early and get started on them but I chatted back and forth with Todd on Monday and he was kind enough to ship out my new AMNPS that day for me so I'm planning it's maiden voyage on this smoke. Todd is awesome by the way, but you all know that already. Now my plan is to try a "set it and forget it" smoke overnight Thursday into Friday. I'm going to make sure the AMNPS is going good around 11pm, set my MES to 220 and catch some shut eye. I'll then finish them in the morning...foiling and taking to 205ish then off to the cooler for a couple hours before pulling. I've got one of the Walmart wireless probes that I can set for 165 and it will alarm and I"m going to pick up another standard probe tomorrow for the second piece of meat.

Kind of an ambitious smoke for a newb like myself.....am I setting myself up for disaster? I'm also wondering if I would be okay setting the butts in shallow foil cake pans for the duration of the overnight smoke?  
 
That plan sounds perfect to me . That's the way I usually do them . As for the pan I'd say pan one and leave the other on the rack . They look like great pieces of meat . Sometimes I put mine in a pan after it's been in there for 5 hours or something . I never seem to get enough bark on mine . A lot of folks will be responding to this for you .
 
You have a good Plan...Practiced...and asked Questions...Short of a Power Failure...You should have a Great Result!  A 30 is roomy...Top two shelves, Butts, #3 Drip pan...This would be the way I would go...like jsdspif, I'm a BARK HOUND!...Good Luck...JJ

Sounds like you will have a nice successful smoke.  You could use the foil pans if you want.

I use them after about 4hrs into the smoke.
 
I really like the bark so I do it like JJ, but there sure would be a lot less mess with them in pans!

A good plan is a great thing and all but I just can't seem to sleep with meat in the smoker.
 
Well I threw the butts on at 10:30. I did every trick I could think of with the AMNPS..... Put it unlit in the 225 degree smoker for an hour to make sure the pellets were good and dry, foil tented it to prevent drips from interfering, pulled the chip pan out an inch and a half, and pulled the chip loader out a few inches. I'm already impressed with the TBS coming out my chimney, the perfect mix smells fantastic! I lost a lot of heat when I put them on but looks like it's recovering nicely. It's pretty crisp outside in the upper 20's so hopefully I can get a good 5 hours of shut eye before I hit 165. Gonna babysit it for another 45 minutes or so then say a prayer and crash. Wish me luck....
 
Interesting.... 2:15am and I wake up to no smoke. One probe is reading 139 and the other 128. I opened the door to find my AMNPS has completely burned through all three rows. Maybe I had too much airflow? I've reloaded it pushed the chip loader back in all the way.
 
After I got the AMNPS going again at 2:30 ish, I was up for a couple hours keeping an eye on things. Still gettin TBS so I fell asleep again. I awoke breifly at 5:30 and one was at 165 and the other was 10 degrees behind it. 6:30 and my wireless probe alarmed letting me know the other had reached 165 so I went out to foil them. That's when I noticed I had completely burned through the full AMNPS yet again. 8 hours, 2 full trays. Is this normal? I thought I was supposed to get a good 9 hours out of one load?

Anyhow they are still running about 10 degrees apart so once they both hit the 195-205 range in the cooler they will go. I've snapped some pics along the way and will continue to do so and update this post accordingly. As for right now, I'm going to nap some more!

Mark knows butts, and I have to agree with him on those two fine looking butts!!!

Up here, the butts are covered for more than half the year!!!

I have to agree with both of these guys!!  Those are fine looking butts!  Up here they are covered for 3/4 of the year!!!!!!

You can't beat nice Butts!  Covered 3/4 of the year!?...Geez Blue...You must go through a lot of FOIL!
 
 
Butts are resting comfortably in the cooler. Something tells me they are only going to get an hour because I haven't had lunch yet.

14.5 hours and I pulled them at the same time. One was 202 and the other was 197. As I removed the foil wrapped butts from the racks to the cooler, they jiggled like a bowl full of jello....is that a good sign.
