Duck,stuffed with duck sausage ,mango

This was my throwdown entry,I threw it together didnt realise I was going up against "art" like that paella.It was just so pretty.Mine looked like it crash landed on the plate.

Anyway my butcher makes a great duck sausage,duck meat,orange ,pistachio,spices,so I figured Id stuff that inside a duck make use of the start of mango season.

So I  boned out a duck just left drumsticks & wings in brined it in mix of water,orange juice,blood orange juice ,white wine,garlic,szhuan pepper a cinamon stick,mango juice drink,salt.Left it overnight,then got ready to put the duck sausage in it after letting in rest in fridge ,patted dry. OK now, I got to sew this guy shut,but 4 sausages wasnt enough so I  added bacon cant go wrong there,mango,pistachio nuts,spritz  all that with mix of orange juice ,blood orange juice,mango /orange drink,brown sugar  & Bundaberg rum.

Carving was harder than I  thought,made a  sauce from some orange marmalade that I  bought down the coast,leftover spritz,sherry vinegar.Pretty tasty still very rich even though I  pricked breast all over.Mango ,orange ,pistachios ,bacon not a bad combination.Bear view

I got the chicken satay idea from doing the duck but couldnt let on until throwdown was over. I got to do what I  have around me.No tri tip,brisket or Boston butt here but a lot of good product. Im on the trial of some camel,we ship tons of the stuff to Europe,in todays paper due to EU tariff ruling,who knew?

Now that is truly the new frontier .

Well I can say that your bird looks awesome and I have to make one before to long. It's on my list but I haven't done one yet.

Colour was good,duck & mango very popular here as a combo. It was tasty but they are fat little guys,not that I  can talk.

 Mango season now in full swing although best fruit will be Xmas as the later varieties come on stream. Stone fruit will start soon so I will work them into something somehow.
