After finishing my first smoke (snack sticks) I decided that I would make a chicken for dinner tonight.  I started yesterday and deboned the chicken (great idea! and fairly easy to do).

Put it in a brine overnight (sorry no pics).

Took it out today and stuffed it with Chicken StoveTop Stuffing.  Wrapped it up and added a rub.

Into the smoker at 250 degrees.  AMNPS filled with applewood.

Can't wait to try it...I'll post more pics when it is ready to eat. 
 
Here are the final pics. 

Hit 165 in about 3 hours.  Then it went into a 350 oven to crisp the skin.

Taste was great!  Loved being able to just cut it and not worry about any bones.  Smoke was perfect and it was soo juicy.  Thanks for looking!
 
I have been cuttin' and boning out meat for years and NEVER thought about making a Bird like this...Great idea!...JJ
 
Chicken looks great. And a really good job de-boning that thing.

No way on earth I could keep my hands from shakin long enough to 

tackle something like that.

I also watched that video that has been going around with Chef Pierre Pippen de-boning a chicken in about 3 minutes while explaining how to. Well it took me about 30-45 minutes to do the same thing. Now you did a fine job with yours and I bet it was mighty tastey too. 
 
I really need to learn how to do that..You did good. Do they taste better with bone in or bone out ????   Great job !
