Stuffer Gear Blowout

Five pounds of snack sticks, five pounds of hot dogs, seven pounds of sausage Tiranno, five pounds of fresh garlic sausage and two pounds of chorizo all ground up and mixed this morning.

I was going to smoke this weekend. It was supposed to be all mine.

Two pounds into the sausage Tiranno, the plaskit gears on my Northern Industrial five pound vertical stuffer crumbled. It was really only a matter of time. It was actually long overdue. I should have had a backup. Next weekend will be different. Once I get replacement gears this week.

My question: since many of these five pound units are identical, will metal gears from another manufacturer work on mine?

I've had my own sausage difficulties this weekend. Went looking for a grinder yesterday, and at 3 different stores came up with bupkus. You'd think in the most powerful city in the world, you'd be able to find a freaking meat grinder. Ended up "grinding" 5 pounds of pork in a geriatric food processor for Italian sausage. Had to link it in a Ronco pasta machine that we got years ago, and promptly put away in favor of the tried and true hand crank Pasta Queen. I luckily remembered it said something about being able to be used as a sausage stuffer on the box, so I dug it out and was able to get the meat in the casings. The only thing in which I'm confident is the seasoning. The fry test tells me it's not exactly going to be the best texture.

It looks like it will work. Not sure of the handle will fit properly but I'll give It a try. They should be here just in time for the weekend.

No apologies needed. I was concerned about sounding like a whiner. Sorry to hear of your difficulties. It doesn't always go the way that we hope.
I would've stuffed it using my Kitchenaid, but I'd still be stuffing now.
Ordered metal gears from LEM. Wish me luck.
