I'm gonna try some souvlaki chicken sausage tommorrow. I'm using 9lbs breasts, 8lbs thighs and 8 lbs pork butt. Gonna stuff it in sheep casing. It's gonna be fresh sausage. I'm  using a prepared mix. Any input would be welcome.
 
Got it done, and it is great.  The mix called for a quart of water but the chicken breast had a tonne of water in them when they were ground so I put 4cups of water in. The next time I make it I am going to add Greek spice for a bit stronger flavor.
