Smoking as we speak!!!

I am in the process of smoking some Pork Loin Back Ribs and I had a few questions. First I'll let you know what I've done so far. Last night I made up a rub from what I had in the spice cabinet, little of this and a little of that.....If it tastes good then I will post the ingredients. I didn't rub them until this morning, 7am, then put them in the fridge until noon. (I would have liked to have them sit in the rub overnight but it didn't workout that way)

The fire box is loaded up with lump charcoal, aged apple wood, and a little mesquite and holding around 220-235deg.

I took pics after I started to smoke, sorry I forgot to take them earlier.

First question is do I have the TBS going or am I off the mark?

Second; how often do I open and juice? I sprayed after an hour with apple juice and other stuff.

I know that I'm a bit picture heavy but I was having a hard time capturing the smoke. It is a little thicker than what it is showing in the pictures but I guess you get the idea. The pics of the ribs are when I first sprayed them with juice. Before and after. The first one is thicker with smoke.

I will turn and spray again at 1400hrs.

(I'm an armature at these forums, give me time and I'll improve)

Looks okay to me Erda- if it's thick, white and billowylooks like the clouds in the sky then it's too heavy. Your ribs are looking good too! Keep us posted as to how they turn out.

TBS looks good to me, from here.

As for spraying, there's so many ways of doing that.

Looks like you should keep doing what your doing----Ribs look nice!!!

In my book, it's hard to post too many pics----But that's me.

Thanks for showing,

You seem to have it down. Looks like good smoke & I personally don't do much spritzing. Just put them in & don't look till you foil.

I always say to people when they want to open the doors on my cooker " If you are looking you ain't cooking."   But,  I do spray with apple juice and some time I put a little spiced rum in with it.  I use brown sugar in my rub.  So I wait an hour or so before I spray so that the sugar melts and the spray doesn't wash off the rub.  hope this helps.

Your smoke looks good and so do the ribs!

Thanks guys

I foiled after three hours then cooked for another 2 1/2. They sat for about 45min before taking them out of the foil. My 2yr old ate two before the cooled down so I had high hopes for them being knock out good......I wasn't too pleased with them. They were way too strong with some flavor, or combination of flavors, that I couldn't place. They almost tasted like beef ribs......Back to the drawing board. If they tasted the way they looked after I unwrapped them it would have been finger lickin good but....

Oh well I guess I'll just have to smoke some more hehehe...
