Last Smoke for a While W/Qview

This is my last smoke for the next 3 weeks, as I leave to the USA

For 2 weeks on business. I will be in LA and in Vegas with stop in London.(i will have the laptop with me)

I can’t leave the family  without a stoke of pastrami so ,

I corned beef topside for 12 days and smoked it for 14 hours at 225 with Apple & Cherry

It came out great and yummy but in two colors I don’t know way

But it is soft and juicy.

Wow!!!!  You're leaving them some Awesome Lunch Meat !!!

 

It just can't be made to look any better than that !!!

It looks like the cure didn't get all the way to the center. That's why it's not pink all the way through. How exactly did you cure it? Looks pretty tasty anyway.

Good looking stuff....Have fun in sin city! If you get the hankering for great Italian, Give Casa De Amore a call. Old school Vegas decor. They will pick up and return you in a limo as well. Went there a couple years ago during CES. Too much fun.

Ahron, Like Ale said it looks like the cure didn't get to the center of the meat. How did it taste? Did the center taste the same as the outside? Maybe that's how these guys get these great smoke rings that look fake! Have a great trip to the US, I sure wish you were going to be close to me I would love to meet you.

 I thought so too but it was in the brine for 12 days .it is my normal one salt  brown sugar cure#1 and spices next time i will inject

  Al it taste great . Believe you me i tried to get a flight out of Miami on the 6/11 in the evening so i can surprise   you guys and join you at the Fisheating Creek but no luck .maybe next year

Ahron, I've been watching the progress on the Smoker and mout say, way to go icon14.gif

 

The Pastrami looked luscious also drool.gif.

 

Have a safe and "LUCKY" trip to the States and VEGAS yahoo.gif. If you haven't been and have the time ,have a blast pepsi.gif,I'll be waiting for the Q-view

Dang that looks good! Coming to Los Angeles or Louisiana? If Los Angeles I recently learned of this yummy sandwich joint called Eastside Market Italian Deli, or just Eastside Deli, its just outside downtown.
