I wasn't planning on buying a butt while at Winn Dixie but this one was calling my name..  It looked great.

Gave it a real light dose of SPOG.

Cranked the WSM at 6am  it was gliding comfortably at 225 with local pecan by 6:25.

Foiled at 165 and then into the cooler at 205 at 4:30pm. 10 hours...not bad for this big chunk of meat.

Out of the cooler and pulled at 5:30. Some of our favorite finishing sauce mixed in.

Mashed potatoes and my habernero sauce and some of Smoking-Ks hot sauce made life right.

The Womans family showed up and we ate good.

For those who don't think foiling makes a bark or ends up mushy take a close look at the pictures!!!

Sure is some nice lookin PP Craig.

I basically do mine the same why you are doing yours. I also get a very nice bark, and it is not mushy.

The only time I didn't like the bark on mine is when I left it in the cooler for more then an hour and a half.

Takeing out of the foil after an hour in the cooler, I let it set about 20 mins before pulling. Bark kinda stiffens back up, and is really good.

Great looking PP, fpnmf!  And a little gauntlet-throwing should stir up the conversation!!!  I have always foiled and never had any real complaints; however, I have been curious to do one un-foiled to see what the difference is.

James you should give it a try one time without foil and decide for yourself. Personally I don't foil anymore, unless I'm running out of time & need to get it done, then the foiling shortens the cook time considerably.

I agree...  I tried it without foil and it was just way too crunchy for us.

I agree too---We don't like an overabundance of Bark here either, or we would go with the no-foil.

My Lab died, and the extra Bark scares our cat.
