The center piece of this meal was a chicken injected with a garlic oil and beer mixture.  The side dishes include some potatoes, sausage, and stuffed onions.

 What you stuff  the onions with ????

You ever try the  potatoes unwrap ? I put garlic butter all over the outside.

Unwrap lets lot of smoke get to it.

Chicken has nice color to it.

To all: I only foil the potatoes after about an hour and a half, I stuffed the onions with rice, spinach, garlic, breadcrumbs, and some random dry rub I had, the potatoes were rubbed down with the same random dry rub and olive oil, and the sausage was made by a local italian market but not myself.  The name of the market is Lovera's and I think they ship their stuff nationwide; just search for loveras's in Krebs, OK.
 
Thanks all, and there was beer injected in the belly of me and that bird.  I will give 'yall a note about the onions (which I will be doing again) I cut them in half, brushed them with olive oil, and let them sit in the smoker for 30-40 minutes while I prepared the stuffing and then stufffed them and put them back in the smoker for another 40-50 minutes and they came out well tamed with just a little onion bite left to them.
