The pulled pork I did for the pitch-in was such a success that I am now getting requests to do more for individuals.  I am still new at this and it makes me nervous.  How the heck do I say no to them.  I have agreed to do just one, she wants on Sat by 11am for sons Bday party.  She is going to provide the pork (2- 7or 8#'s), foil dishes and some spice rub.  This is still a fun hobby so am not going to charge anything for time.  I think 2 little ones should cook the same as 1 of same size,, hoping anyway.  Just have 1 probe for the Maverick so will have to use that as a guide.  Gonna go with standard brine plus some savory herbs, her choice of rub spices and choice of smoke pellets.  I did warn her though that there are no guarantees it will be as good as the other one.  I am afraid that if I take on too many requests then I will lose the fun of it.  Here is QView of the pitch-in one that I did.

. Don't worry so much about the requested Smoke , it'll be great. I'm sure by now you know what you are doing, since the Pitch-in went so well.

 I would , IMHO , taste the mix of spices she wants and have her to also , that way she has an idea of the taste of the final outcome.(mix them and put some in your palm and taste :)-

Enjoy your smoke as usual and present the 'Gift' to her with a big grin

 You are right. If you start having to smoke for others every weekend , it's not as fun when you do it for your self.

 You can do for others but make it worth your while by charging for it.

 or if you don't want to charge, tell them that when i decide to smoke something ,i'll give you a call.

If you want me to smoke something for you drop it off and i'll call you when it's done.

 That way you control when and how much you smoke and they have to drop off and pick up
 
:)  suppose it wouldnt be too bad if I just said that I smoke only on the weekends, still makes me nervous when it is going all night and I cant stay up to watch it.  Another test of the AMNPS n vent mods I guess, this time a full tray of pellets, 8 hours of perfect smoke should be fine for flavor.
 
What ya got looks very good. I haven't done more then 1 but at a time so far, but am getting ready

to put 2 on the smoker later today or in the morning. I am making it for my Brother and his wife's Hair Salon.

It will be a give away, a sort of "marketing" thing.

Do like I do, Put it in the smoker, kick back relax, let er cook. My fun is lookin' at the finished product.

please  please,, dont let me get that far into this fun hobby :)  I would love to have a offset wood smoker but I dont do enough to justify,, just would like to have it so I can get the merit badge :)  Smoking the old way is so much more difficult then with electric and not sure wife would let me sit there for 16 hours or so.. drinking beer and chatting with neighbors,, then crawl into house with the finished product :)  Would be fun though,, trim the apple trees for neighbors, prune the grape vines down to the ground,, maybe even take some branches from the ornamental cherry that is growing like a friggin weed in back yard :)  (2) 7#'s in brine.  I bought some pink Mediteranean salt, just for damn giggles,, used 1.5 cups with 1.5 gallons of water,, then tossed in some savory herbs. Whisked the heck out of it for 15 mins,, salt dissolved and then tossed in the pork butts, bone in.  I trimmed excess fat and scored what was left in crosshatch pattern.

I think it is a great compliment that someone requests something that you have made.  I have friends at work that I share all my Q with when I bring it in and they always tell me that they would pay me for my fatties.  I usually tell them when I'm going to be smoking and then just throw some extra on.  I still haven't done anything for profit as much as I do it for trade.  But I figure I'll let them pay for the ingredients and throw some money in for the charcoal and I enjoy it enough to not charge for my time.  And I usually do something for myself at the same time so it works out in my favor.  My wife loves most things that I smoke so she doesn't object to my willingness to fire up the smoker.  I see this as a chance to get extra practice and as long as you keep producing great results, you can only continue to hone your craft.
 
I agree,, though sadly,, lil MES is gonna be filled with someone else's PP.  I have told Donna/wife that I will smoke something whenever she wants.  Though wives sometimes just dont ask for anything.  If Maverick and AMNPS works like last time,, I dont have to sit and watch it constantly, the joy of an electric smoker.  I do have this urge though,, carnivorous urge,, would love to take all the spare cobblestone bricks around the house and build me something to do a full hog.  Now that in my opinion is the quintessential pinacle of a smoker.  I even have a little 6x4 concrete pad to build on but it happens to be right under power wires to house.  About 200 cobblestone bricks, 50 or so cement blocks and a father n law that has been laying brick for 60 years.  He built full fireplace for us in the remodeled kitchen,, I got too be the mud guy,, but I learned :) 
 
Looking good so far.  I will be doing about 32 lbs of Butt's for the Dec San Diego Chargers VS Buffalo Bill's game.  It was a request and I am happy to oblige.  Having a MES makes doing butts easy cause I don't have to sit around and stoke a fire and such.  If the requests get out of hand a "Donation" will be asked for

Thank you all for your help.

I dont have Qviews yet from results but have been told several pcs are on the way.  I just put the butts in the cooler and delivered them.  I have had several rave reviews this morning at work from folks that attended, I may also be getting more requests if I am willing.  Hostess was asked several times where she purchased the pulled pork from, thankfully she just told them it was a test run from a friend.  From what I hear,, it was snacked on all day and the only leftovers made 2 small sandwhiches for the hostess and her husband the next day.  It may not be a big success to some but please consider that I am a computer geek,, not a big social person.  Smoking has opened a new door to the world for me to step out and meet people and it seems something that I can be quite good at :)  Its feels very good to be able to step outside my box and have something to talk about and enjoyed by others.  Computer work is just so boring.  Thank you thank you for your help in making this all a success and giving me an out from my shell :) 

I would like to give a very special thank you to Eric.  He sat up with me all night chatting while we worked over the specifics of a smoked pork butt on a test run.  As a new smoker, I was getting so frustrated but your knowledge and experience Eric got me through it with perfect results.  A thanks to Pops for his knowledge, pointing me in right direction for the cut and Bear :)  lol,, so funny but when I read what you post.  I am inspired.  Thanks to the rest of you for all your help also.  I have a Maverick now and an AMNPS because of everyones inputs.  I really do feel that MES needs to offer bundles to include those attachments, not to say that MES units are not perfect :)  I have done several runs using them, almost out of pellets already, after just 3 weeks,, as long as I remember to put foil tent over AMNPS and too light through the hole instead of trying to light half the pellets in the tray,, what an amazing product.  Really it is.  I smoked a fatty yesterday with Mesquite,, wife hates the strong flavor but it turned out perfect this time,, she took all that was left to work and I have none for lunch :)
