just bought my first smoker and smoked my first pork butt. I have a lot of drippings that I dont know what to do with. I dont want to just pour it down the drain...... any Ideas???????????
 
If they have not een sitting ou for a long time I would "de-fat" the juices and freeze them to make a gravyor au jus.  Easiest way to de-fat is to put in a bowl and pp in freezer. When the fat rises it will freeze and you can lift it off. 

I often times portion mine out in ice cube trays to make individual cubes.  Great way to add flavor to a sauce and not have to waste all the xtra if you have to open a large can.

Place drippings in fridge, cool then remove fat
