Smoking 2 butts for the family today, only my second smoke but still very confident and excited.

Picked up a 2 pack from Sams rubbed with Billbo's rub last night.

Rubbed and ready for an 8 hour nap in the fridge.

Got up bright and early (4am)

Went out to get the smoker (very old Charcoal vertical) started only to discover that my chimney starter was broken. So into the store 30 mins away for a new one.

Needless to say got back got em re-rubbed and on the smoker by 7:10.

Well Al, they didn't turn out as well as I had hoped.

Unsure if it was a thermometer problem or what was going on, I had one thermometer on a butt reading 205, the other butt was only reading 165. I pulled the probe from the 205 and essentially swapped probes due to the 40 degree difference. the both read pretty much the same after the swap 205 on the same thermometer and 163 on the other one. so i pulled them and let them rest and while I was letting them rest I boiled some water to check the thermometers. They both read right at 212.

After they rested, the bone didn't pull out, and the meat was very tough to pull, I think it was somewhere in the middle of the two temps when it got pulled. But had an impatient family around and already went over the dinner time.

So it was a all around exhausting day, but very well worth it.

And sorry no other q-view was taken so I have nothing else to report, except my family still thought it was good but I know it could've been better
 
Sound to me it was readind the outer part of the butt not the center or u had it against the bone . At 205 it will fall apart real easy.
 
I know, that's why I was very confused with the situation, but oh well living and learning is all part of the hobby.

But it was good either way just didn't pull as easy as I hoped
 
Sorry it didn't turn out as good as you had hoped for, but it sounds like everyone enjoyed it.

The easiest way to tell when they're done is to grab the bone & twist it a little. If it feels like you could just pull it out it's done & ready to pull after a short rest.
