Hey guys,
This weekend, I'm up for my first official cook off ever. Thanks to the help from everyone here, and alot of practice, I hope I'll do well. This event will have about 100 teams competing in ribs, brisket, chicken and chili. Who ever wins gets to represent CenterPoint Energy in the Houston Livestock Show and Rodeo Cookoff. I'll post updates during and after the event to let you all know how it's going!!

Good Luck!!!!  I have been to the Houston Livestock and Rodeo.  It is so awesome!!!  I miss Texas but my honey is from Houston and he prefers Vegas so here we are.   I will never understand that. 
 
Well folks, I didn't walk away with a trophy, but I think I did a damn good job. This year there were 90 teams competing in the chili, chicken, brisket and ribs portions of the competition. I think we fared well against our smokin' brethren. I definitely learned alot, and have good directions to go forward now! Now, here's some Qview.

Kitchen Setup: We did funnel cakes and chicken wings for our booth on the Friday Night party portion of the competition.

90 teams is a pretty hard field to contend with, but if you learned some things from the experience it was well

worth it.

I learn something new every time I compete.

To be the best, you have to learn from the best.

That is a tough first cook off.  I am here in the Houston area if you ever want to hang out when we are cooking in a cook off just let me know.  Most of our big ones are in the spring.

That's quite a setup you have there.

Everything looks delicious, but the chili looks just awesome!
 
Loved the pics my friend. I sure would love to learn to cook chili. That looks wonderful....

Its really a fairly easy recipe. No big huge secrets on this one. One trick, tho, is that I use three different kinds of meat 1) 1/2# 80/20 ground beef, 2) 1/2# ground pork, 3) 1# chuck, done on a chili grind. Makes for a wonderfully varied texture in the final product.
