Noob saying hi

Hi everyone,

 

I'm new to smoking and excited to get started. Hoping I can connect with other smokers and get advice and tips.

 

The GF and I are doing our first smoke on Saturday for Fleet Week. It'll be the Blue Angels and hopefully some good a$$ BBQ.

 

Smoker: Master Forge Vertical Charcoal Smoker (the $60 jobber from Lowes)

Charcoal: Stubbs charcoal

Wood: Mesquite chunks

Started seasoning about 20 min ago so here are some pics of what I'm working with.

Here's the damper I rigged up with some metal brackets I had laying around. The screw hangs out the bottom of the hole and I use the loop end of a metal skewer to open and shut it. I have to fish around a bit.

Made up the spare ribs last night. Put them on at 6:45 this morning - it's 7:30 and the temp is holding steady at 225...
